Sweet pongal with jaggery | Paramannam | Festival special sweet



Ingredients

Rice – 1/2 cup
Water – 1.75 cups
Milk – 1/2 cup
Jaggery(mashed or grated) – 1/2 cup
Cardamom – 3
Groundnuts3 – tbsp
Seasame seeds – 2 tbsp
Ghee – 4 tbsp
Cashews – 6 to 8
Raisins – 5
chopped almonds – 1 tbsp
fresh or dried grated coconut – 2 tbsp (optional)

Procedure

Heat a pan and roast the ground nut and seasame seeds seperatly and then heat little bit ghee and fry the cachew,raisins and alomonds till turn brown and keep aside.

Remove skin from roasted groundnuts and grind groundnut, seasame seed and cardamom to make coarse powder.

Soak rice for 1/2 hour and then remove water add fresh water to it start cook plain rice.

When the rice is almost cooked add milk and mix well.

Then add the powdered jaggery and powder(seasame & gnuts) to the well cooked rice and keep on stirring on a low-medium flame.

Pour ghee and keep on stirring and cook till nice consistency. (approx.5 min)

Add fried dry fruites, and grated coconut mix well and serve.
